Abstract |
The report discusses methods for identifying and quantifying water-borne routes of contamination of human food and drinking water. The work was performed for the U.S. Environmental Protection Agency (EPA) as part of a program to assess exposure/risk of 65 classes of chemicals (129 'priority pollutants') in the water environment. It is intended as a first step in developing methods for estimating levels of contaminants in food and drinking water resulting from water-borne routes of migration. Points of water contact with food in growth stages, processing, and preparation are identified. A simplified methodology is presented for evaluating pollutant intakes during the growth phase of crops, livestock, poultry, and fish, and information is presented on water use in food processing and home preparation. The routes of contamination of drinking water during treatment and distribution are identified. |
