Abstract A major waste stream in many breweries is the liquor resulting from spent grains dewatering prior to drying. This liquor may account for a third or more of the B.O.D.5 and suspended solids generated by a typical brewery. Initial studies of the spent grain liquor problem indicated that recovery rather than treatment was the best approach. A number of evaporators were evaluated to determine which design was most satisfactory for concentrating the liquor. A submerged combustion evaporator was selected on the basis of engineering analyses and pilot scale tests. A full scale unit was installed at the Houston Brewery of Anheuser-Busch, Inc., in 1970. This evaporator was modified several times to overcome failures of the burner downcomers brought about by high temperatures.
