Abstract
This report has been prepared to fulfill a Research, Development and Demonstration Grant. The grant was awarded to investigate a method of treatment for winery wastewaters. In brief - the grapes are harvested in the fall and are immediately pressed of their juice. The juice is fermented, aged and blended to wines. The solid residue is tilled into the soil for disposal and fertilization. Wastewater is generated from washing of the equipment, cleaning tanks, spills, etc. The wastewater is low in pH and high in sugars. More waste is generated during the short pressing season than during the processing season. A long term activated sludge treatment system followed by a tertiary sand filter is studied. BOD and solids removals are impressive. This paper describes this treatment system and characterizes the winery wastes.
