Abstract
The specialty food industry generally falls within SIC Codes 2032, 2035 and 2037 and includes approximately 2,300 plants in the United States which produce a wide variety of food products. For waste categorization purposes the specialty food industry was divided into ten categories on the basis of ingredients used, type of product, and liquid waste generation. Twenty-six nationally distributed specialty food plants were investigated and 24 of these field sampled for ten days each to determine raw wastewater characteristics and volume. Related production and processing information was used to calculate the wastewater generation per 1,000 kilograms of production in terms of: five day biochemical oxygen demand, chemical oxygen demand, suspended solids, volatile suspended solids, total phosphorus, total Kjeldahl nitrogen, grease and oil.
