Impact/Purpose:

The audience for this book chapter is lower-division undergraduates enrolled in a urban ecology course. The title of the text is "Understanding Urban Ecology: An Interdisciplinary Systems Approach". The purpose of the chapter is for students to think critically about the production, processing and distribution of food in cities and the impacts both local and distant food production and the environment. The chapter provides examples of cities and people that are finding new ways to improve the sustainability and resiliency of urban food systems.

Description:

This book chapter provides an overview of the impacts of urban food consumption, introduces the concept of food deserts in cities (lack of access to healthy food), and describes efforts to improve the sustainability and resilience of urban food systems to extreme events and supply disruptions.
